A quick little healthy recipe for those of you who may be experiencing the same level of pear inundation as I am:
Pear, Arugula (or Rocket), and Pine Nut Salad
My suocera‘s pear tree is fruiting, and every day there are buckets of them. It’s also the end of rucola season, which is good news for the garden (they pop up as weeds everywhere), but bad news for our tummies. This little salad is super quick and easy, and a nice way to stay on track with my #fitaly attempts.
Just slice up a pear or two, throw it in with some arugula (or “rocket” for non-Americans), and dress it with a bit of olive oil, lemon juice, and pepper. Sprinkle pine nuts on top for a little crunch and anti-oxidant power. And voilà:
